
Jamaican Easter Bun is one thing that we’ve found no guest to Hotel Mockingbird Hill at Easter can resist. It is the Jamaican equivalent of Hot Cross Buns but it is baked in a loaf tin. Into the mixture goes lashings of rich molasses, mixed dried fruit and depending on your preference orange or lime marmalade along with cinnamon, nutmeg, vanilla and if you are feeling very decadent a small amount of stout. Traditionally no fires were lit on the island on Good Friday so this used to be baked the day before in a banana fire.
Most Jamaicans like to eat this with a hard cheese, but at Mocking Bird Hill this year we are going to try it with a soft organic honey & cinnamon goats cheese, that we’ve just been delivered by our local cheesemaker, Tom’s Hope and of course accompanied by Blue Mountain Coffee. It’s worth coming just for afternoon tea to try!
Please note in keeping with the traditions of the island on Good Friday our menus will consist of fresh locally caught fish and for Easter Sunday we will be serving lamb.
